BHM Students Prepared Traditional Gujarati Cuisine

On Wednesday 8th December 2021, 5th-semester students of Bachelor’s of Hotel Management prepared a Gujarati Cuisine Thali. The program was conducted by the organizing coordinator, Chef Parmesh Dutt, and around 13 students took part.

The organizing department, School of Hospitality & Tourism hosted the program in the BHM lab where a class on food and beverage preparation was held. The students tried a variety of Gujarati dishes and prepared a Gujarati Thali. A Gujarati Thali consists of roti, dal or kadhi rice, and shaak. ‘Sabzi’ is called shaak by the Gujarati people. The thali also includes preparations made from pulses or whole beans such as moong, black-eyed beans, etc.

The students of BHM got to learn the indenting & controlling of food cost. They learned the techniques of preparing different types of food and beverages. The students of BHM understood how to maintain the sugar and food technology processing hygienically. They comprehended new technologies that help in enhancing food flavors.
